This is a brand new Compressor Run Capacitor for the Bunn CDS-3 machine.
A capacitor (or condensor) is actually an early form of a battery, designed to store electrical power.  Often used to help large motors overcome the initial "extra" energy needed to get started (overcoming inertia), they can also be used on large motors to help them keep running smoothly as loads vary during operation.
The actual replacement of this part is relatively easy, but the troubleshooting needed to determine the need to replace is intermediate and may require a repair technician with electrical and refrigerant systems experience.  Essentially, if you experience fluctuations in the compressor being used during operation of  your CDS-3 compressor (and you have a dedicated 20 amp branch circuit to the machine) this would be the first place I would look.  Remember that there is one refrigerant system serving three independent hoppers (refrigerant flow is controlled to each hopper independently via the electrically-operated solenoids), so demand on the compressor at any time may fluctuate from "1" to "2" to "3" units of energy.  If your machine is quitting or stalling during operation, especially when you hear a solenoid click on, this might be the fix.  (But, as in all complex systems, it is possible similar symptoms could be caused by another problem, thus the technician and compressor tester may be required).
Notice:
In general, parts for the CDS-3 machine are considered obsolete and soon may be impossible to acquire from Bunn (we've been advised that when their existing parts stock is gone they will no longer be available from Bunn).  If you plan on keeping your CDS-3 machine running well into the future, and there is no reason not to desire this, please consider investing in an appropriate cache of spare parts while these "new old stock" parts are still available.
